Will I Have Homework in Culinary School?

I would suspect that many aspiring culinary students envision culinary school as one long “cooking class.” You go to a kitchen and a grumpy chef shows you how to make something, you repeat the process while he shakes his head and grunts. You make mistakes and learn from your mistakes, etc. There’s pressure, but it’s a fun kind of pressure.

Culinary School is SCHOOL

Well, this is not the experience of most former culinary students. Culinary school, for the most part, is  school . Even if it is a  vocational  rather than a  liberal  program, you will have homework. You may even have a great deal of homework.

You will also have pop quizzes and final exams. Undoubtedly, you will have projects. You may even have to write papers!

You will be expected to learn a great deal of information. A lot of it will be math-related. There is a lot of math in the professional kitchen.

Yes, There is Math In Culinary School

You will need to be familiar with different units of measure and unit conversions. You’ll have to deal with weights versus volume and even converting between the two. Some other math-related problems:

  • recipe scaling
  • yield percent
  • purchasing and cost control
  • costing recipes

And, that’s just the math. You may know how to cook the perfect “x”, but can you list the exact steps?

This may be expected of you. The purpose of culinary school is not to prepare you to work in a restaurant kitchen as if you are a veteran — it is to cram a great deal of basic information into your head in a short period of time.

You will not make one hundred hollandaise sauces until you can do it in your sleep. There is just no time.

What you will know is how to theoretically make it perfect, along with many other techniques.

This is not to say that you cannot get a huge amount of hands-on experience in culinary school, it simply depends on the curriculum.

There may be over a thousand hours of hands-on learning, or there may just be several hundred.

There is a reason for the homework and everything else you do. A proper culinary education in a good culinary school will give you a distinct advantage over those who learn on the job. You will get a much more broad experience!

Some of those who opted not to go to cooking school tend to think that this allowed them to be “more creative” in their approach to cooking. However, it is the familiarity with a broad range of techniques and flavors that provides the spark to kindle even more creativity in your career to come.

Can I Become a Chef’s Apprentice?

You should have realistic expectations going into culinary school and realistic expectations coming out.

A good expectation is that your classes, both “lecture hall” and kitchen classrooms, will be rigorous and demanding. You will be challenged.

But it is a basic and theoretical education, not the equivalent of working in a restaurant. Internships and apprenticeships better prepare you for this.

Some schools will even offer opportunities to study abroad. Much of what you learn will not serve you at all once you enter the workforce. In this way, culinary school is no different than any other post-secondary education.

What Will I Learn In Culinary School Besides How to Cook?

Some schools, such as the Culinary Schools at the Art Institutes, may have student-run restaurants. A famous example is the Caterina de’ Medici restaurant at the Culinary Institute of America, Hyde Park.

Many programs will have internships built-in, depending on the particular track you enter into.

This additional experience could be invaluable, but consider the cost as well — regardless of the experience you gain in school, you will still be starting at the bottom once you graduate.

You may also want to consider  working in a restaurant before going to culinary school , to help you figure out what you want to do and better prepare yourself for what lies ahead.

If you are planning to go to culinary school, remember that you will be going to school, not a fancy version of home economics.

Culinary school is a foundation that will help prepare you for your career, but just like any other education, it does not make your career for you. Consider, as well, whether you want a more liberal or vocational education.

Should You Work in a Restaurant Before Attending Culinary School?

What’s the difference? A vocational style of culinary school focuses only on what you need for your culinary career. There are not as many electives (although there may be some).

A liberal education is a “liberal arts” type of education that will round out your learning with other courses, such as business or English composition classes.

#1: Culinary Institute of America at Hyde Park

The Culinary Institute of America was founded in 1946 and is one of the best culinary schools in the world. With campuses in New York, California, and Texas, it has many options for students across the country.

The school offers a number of degree programs, including bachelor's and associate degrees. There are also professional development programs, as well as certificates for food and wine enthusiasts.

#2: Institute of Culinary Education

With campuses in Los Angeles and New York, the Institute of Culinary Education is a good option for a culinary degree. The Institute of Culinary Education offers diplomas in hospitality management, pastry and baking arts, culinary arts, and more.

ICE has multiple degree programs of different lengths, so you can craft an education that meets your goals. With more than 14,000 graduates, ICE is one of the most renowned culinary degree programs in the United States.

#3: Johnson and Wales University

Johnson and Wales University has locations in Florida, Denver, Charlotte and Providence and offers ten different culinary programs to choose from. Program options include culinary arts, culinary nutrition, culinary science, baking and pastry arts, restaurant, food and beverage management, and more.

The breadth of degree programs at Johnson and Wales provides a good option if you want to study the culinary arts, but aren't exactly sure what you want to specialize in yet.

#4: Metropolitan Community College: Omaha, Nebraska

Metropolitan Community College in Omaha, Nebraska has one of the best culinary programs in the country. The programs here are focused on helping you become a restaurant manager or a chef through a combination of education and experience.

Low tuition prices and the chance to build a strong culinary portfolio make this school a great option.

#5: Auguste Escoffier School of Culinary Arts

The Auguste Escoffier school teaches techniques developed by the "King of Chefs," Auguste Escoffier. This program offers small class sizes, as well as unique opportunities like the six week "Farm to Table" experience that brings students out of the kitchen and onto the farm.

Students learn state-of-the-art techniques and receive valuable paid internship opportunities. Additionally, Escoffier is the only culinary school in the United States to offer a 100% online option, so you can enroll here no matter where you live.

#6: Sullivan University National Center for Hospitality Studies

Given an "exemplary" rating by the American Culinary Federation, the Sullivan University National Center for Hospitality Studies offers associate degree programs that students can finish in eighteen months.

#7: Culinary Institute LeNotre

The Culinary Institute LeNotre , located in Houston, Texas, prides itself on its low student-teacher ratio and emphasis on hands-on learning. The institute is particularly renowned for its pastry classes, but it also has more general culinary arts degrees. In general, there is an emphasis on mastering the intricacies of French cuisine.

Since its inception in 1998, the Culinary Institute LeNotre has continuously expanded, and it now includes ten kitchen and pastry labs to teach a variety of culinary techniques.

#8: Kendall College of Culinary Arts

The Culinary Arts Program at Kendall College (located in Chicago) focuses on practical application and highly-skilled instructors. All chef instructors have at least ten years of culinary experience. There are multiple program options, ranging from a Culinary Arts Certificate to a B.A. in Culinary Arts, so you can choose the depth and amount of time you want to spend in the program.

Kendall College's program is known for turning out skilled chefs: currently, 12 of their alums have been honored by the James Beard Foundation.

#9: Culinary Institute of Savannah

The Culinary Institute of Savannah caters to students at all stages of their careers, from total beginners to experienced. Students learn both international and American cooking techniques and can earn degrees in Culinary Arts or Culinary Baking and Pastry Arts.

All degree programs require extensive time in the kitchen.

Thinking of Going to Culinary School? Here’s What You Should Know First

If you’re really passionate about cooking and are serious about making a career out of it, there are things you should know first. Sure, you’ll learn how to use your knives and sous vide a steak, but you could also be signing up for long hours and little starting pay. As with any big decision, there are a lot of options to weigh, and we’re here to help. Scroll down to read about the harsh truths of culinary school before you sign on the dotted line.

1. You may be broke afterward. Private culinary school isn’t cheap, and your student loans could reflect that. If you want to pinch your pennies, a lot of community colleges offer culinary programs that you may not know about.

2. It does not mean job security. Yes, a culinary degree helps get your foot in the door, but having experience is just as (if not more) important. Most line cooks start training from a young age and work their way up without any schooling. Try starting small with an internship while taking classes to climb the ladder while getting an education.

4. You need a thick skin. Many culinary professors aren’t the most tender of creatures. While it may seem harsh at the time, it’ll prepare you for what the environment is really like in a professional kitchen. If you do want to work on the line in a restaurant, it’s probably best that you’re exposed to that before you go home crying on your first day of work.

5. The hours aren’t for the weary. Prepare for your nights, weekends, and holidays to be non-existent. Think about it. When do people go out to eat? When restaurants are at their busiest, that’s the time you’ll wish you were off eating with your friends instead of cooking for them. On the plus side, you get to sleep while they’re at work.

6. Some of your credits may not transfer. You may have a bachelor’s degree in communication, but you still might have to re-take that public speaking class. This depends on what school you attended and what school you’ll be going to, but there’s a chance that you’ll have to start from scratch — even with entry level courses.

7. You can’t be squeamish. Food allergies are an exception, but if you’re just scared of handling the live lobster, your instructor is going to roast you. If the thought of stuffing sausage in a casing and scaling fish sounds like a bad dream, then maybe you should go down the baking and pastry route and not culinary arts.

Top 15 Best International Schools in Moscow, Russia

Moscow International Schools

There are over 20 international schools in Moscow   and the surrounding area, with 11  British schools , 3  IB schools in Moscow  and 2  American schools .  Most are English speaking and some are bi and multi-lingual. Read on to find out what the areas of Moscow are like and how they relate to some of the best Moscow international schools.

Life in Moscow

Moscow is the capital of Russia and the largest city in Europe by area.  It is also one of the most populous cities in the world with an estimated current population of more than 15 million within the city limits and 25 million within its metropolitan area. According to the 2019 Forbes List, Moscow is home to more billionaires than anywhere else in the world apart from New York and Hong Kong.  Moscow has a rich cultural history and is well known for its unique and beautiful architecture, art, classical music and ballet.  The city is easy to get around on foot or by public transport, although the metro gets very crowded during rush hour.  The roads are very busy with frequent traffic jams.  In recent years Moscow has become a real culinary capital with plenty of excellent restaurants coffee shops.  It is a common misconception that Russians are unfriendly.  In Russian culture it is unusual to smile at strangers.  Most Russians are warm, sincere and honest and will give you a genuine smile once they get to know you.    

Central Moscow

The prestigious district of Arbat is centrally located in the western part of the city and home to a number of embassies.  It is a popular area rich in beautiful architecture and luxurious apartments. 

The central, convenient and lively Tverskaya Street in the north westerly part of the city leads directly to Red Square and the Kremlin.  There are, however, some quieter side streets, like Kamergersky Lane, with beautiful housing and an abundance of restaurants and cafés.

Patriarshiye Prudy

To the southern side of Tverskaya Street is the popular family area of Patriarshiye Prudy (Patriarch’s Ponds).  This is a calm and quiet neighbourhood around a beautiful city park.

Basmanny District

To the east of the city centre is the Basmanny District, a clean, green neighbourhood considered to be a calm oasis in the heart of the city.  This area is home to Chistye prudy (Clean Ponds), a popular park with paddle boats to rent in the Summer or ice skates in the Winter.

Tretyakov Gallery

Situated in the southern part of the city, the Tretyakov Gallery area is lively with plenty of upmarket bars and coffee shops.  There are some quieter neighbourhoods off the main streets of Pyatnitskaya and Ordynka.

Outside the Garden Ring

Fruzenskaya area.

To the south west of the city, just outside the Garden Ring, is the Fruzenskaya embankment.  This area is very leafy and green overlooking the Moscow River and Gorky Park.  This area is popular with families but apartments are often quite small and expensive. 

Leningradsky Prospekt

Leningradsky Prospekt is a busy avenue to the north west of the city that connects with the top of Tverskaya Street at its southern end.  This quirky, bohemian area, famous for its Artist’s Village (Sokol area), is leafy and green with some remaining dachas (Russian country cottages).

Outer areas of Moscow

Around 10 km to the north of the centre is the green district of Moscow’s Botanical Gardens, one of the largest in Europe, is a great place which boasts a valuable collection of rare plants while providing visitors with the opportunity to plunge into the world of nature without having to leave the city. Pokrovsky Hills

Around 15 km to the north west of the city centre is Pokrovsky Hills, an exclusive gated, residential community with family housing situated in a hilly, wooded area adjacent to the   several international schools .

What About Grading and Feedback?

You may be wondering how chef instructors grade dishes without tasting or seeing them in person. What’s the Schedule Like?

While a day in the life of an online culinary student varies, you can expect to spend anywhere from 15 to 22 hours per week, depending on your program, credential, and individual pace. Each week, students can participate in scheduled, live video discussions and lectures. Lectures must be attended (whether live or watching the recording later) and assignments are still due by a deadline, but online students can fit these into their existing schedule. What Materials Might You Need for Online Culinary School?

First things first: you’ll need WiFi and a device to complete your program. A strong internet connection is important to ensure lectures and online interactions are clear and easy to understand. But when it comes to the kitchen, online culinary students receive a standard toolkit containing some essential utensils and tools for their specific program, as well as a chef’s uniform complete with a coat, apron, and skull cap.

These toolkits vary based upon your program. For example, a Pastry Arts student may receive different materials than a Culinary Arts student would. But both include many of the essentials needed for coursework.

MOSCOW — In the coveted corner office, a bearded man in sweatpants scrambled eggs at a kitchenette, all the while taking in the serene beauty of the city lights twinkling far below.

In the conference room, or as the company prefers to call it, the “common area,” two other men lounged about playing video games on an Xbox. In place of cubicles, there are bunk beds.

High Level Hostel, one of the newest tenants in the financial district here known as Moscow City, sits on prime real estate on the 43rd floor of a multimillion-dollar glass-and-steel tower. It is not a youth-hostel-themed work space, but an actual youth hostel — dirty socks and all.

“We thought, ‘why not open a hostel in a skyscraper?’ ” said Roman Drozdenko, the 25-year-old owner. “Nobody’s done that before.”

The tower, with its marble veneer foyer, banks of elevators and breathtaking views, was clearly built for lawyers, accountants or stock traders. But “there were no questions regarding our guests” from the building management when he opened in September, Mr. Drozdenko said. “In fact, there were no questions at all.”

Moscow’s skyscraper district, formally the Moscow International Business Center, reflects the broader problems in the Russian economy. The country, facing broad-ranging financial sanctions and largely dominated by state-run companies, simply has no need for vast office spaces for stock traders, auditors and bankers.

Vacancy rates in the newly built financial district have become acute. The entire site, some 148 acres that now includes the tallest building in Europe , Mercury City Tower, had a vacancy rate of 32 percent at the end of October, according to Cushman & Wakefield, the real estate consultancy. The rate is projected to rise above 50 percent next year when new buildings open.

“Russians have a great tradition of building things they don’t need,” Sergei Petrov, an office worker in Naberezhnaya tower, said of the emptiness behind the glass facades, a veritable Potemkin Wall Street.

Moscow City was envisioned as a hub of emerging market finance, a shiny skyscraper-dotted testament to Russia’s growing international influence. For a time, the idea was not improbable: From 2000 to 2007, the Russian economy grew on average 7 percent a year.

This herculean undertaking on a bank of the Moskva River was to be Moscow’s answer to Manhattan or the City of London.

One tower, called Evolution, twists in a DNA-evoking double helix. The spires of Federation Towers resemble billowing sails, evoking Russia sailing into a capitalist future. Federation Tower East, when finished, will rise 95 stories to a height of 1,224 feet, surpassing its still mostly empty neighbor Mercury City Tower as the tallest building in Europe.

Eight skyscrapers are finished, including the gold-tinted Mercury tower. Eight others are under construction, and two more are planned. The entire site is scheduled to be finished by 2018.

But Russia’s tanks are now getting more international attention than its banks, leaving Moscow City as a $12 billion reminder of the nation’s economic woes.

Western sanctions, for example, have taken aim at Russia’s largest state financial institutions, Sberbank and VTB, which both own towers or floor space in Moscow City. The two banks now have a limited ability to issue debt on global markets, thus limiting their growth options.

Sanctions by the United States and the European Union are expected to trim about 1 percentage point of growth from Russia’s gross domestic product this year, and slightly more next year if they remain in place. Even without sanctions, problems have been stacking up. Rising inflation, falling oil prices, and a tumbling ruble have left Russia near recession.

The government also accounts for an outsize proportion of the economy, leaving scant jobs for the grunt workers of private enterprise, the bankers, lawyers and traders for whom Moscow City was built. In Russia, 81 percent of the shares of the top 10 companies are owned by the same entity, the state, compared with 11 in Germany, according to a study by Organization for Economic Cooperation and Development economists.

Rather than turning to banks, Russia’s largest company, the sanctioned state oil company Rosneft is now appealing directly to state funds for loans. And the Kremlin this year again delayed shifting pensions into the private sector, dealing another blow to financial sector jobs.

“Somebody had the idea that if you build a lot of skyscrapers in one spot you have an international financial center,” Darrell Stanaford, a real estate analyst in Moscow with Romanov Dvor, said in an interview. “But it doesn’t work. You need other things, too.”

Moscow City, which has taken a direct hit from these policies, is now shifting tactics to fill the glut of premier office space.

City, the management company for the development in the neighborhood, says financial services companies are no longer the majority of its new tenants. Of the new Russian occupants signing leases this year, 58 percent were nonfinancial companies as well as local small and midsize businesses, like High Level Hostel, according to the management company.

New buildings are also being repurposed at the development stage. One low-rise will become a 6,000-seat movie theater.

In finished towers, various nonfinancial ventures are renting space. One company sells Cambodian citizenship to Russians wanting a second passport. A culinary school and restaurant are opening.

Many multinationals have rented space. IBM, General Electric, KPMG, General Motors, Hyundai, Energizer and Japan Tobacco International are all tenants, as is a major Russian investment bank, Renaissance Capital.

Prices, too, are falling. Mr. Drozdenko, the hostel owner, said a real estate agent offered him the space for about $8,000 a month for 1,600 square feet, or about $5 a square foot.

In Moscow City, office space currently averages $6.90 a square foot each month. That’s below the average of $7.75 for high-grade office space elsewhere in the capital, according to Denis T. Sokolov, senior analyst and a partner at Cushman & Wakefield in Moscow.

“We have to do this,” Dmitry Granov, the director of City management, said in an interview of the effort to broaden the range of tenants, because of the dearth of financial sector jobs in Russia.

“If before we were looking for international corporations, today we are looking for Russian companies, and small and medium businesses,” he said. He said dropping rents would attract technology start-ups.

City management company contested the vacancy estimate by Cushman & Wakefield. Cushman & Wakefield counts vacant sublease space in its total, while the management company does not. City says current vacancies are about 20 percent.

Meshing the various constituencies is also creating challenges.

“The cafes, amenities and dress code you need is different for clients of a youth hostel and for investment bankers,” said Mr. Stanaford, the real estate analyst, of settling tenants like High Level Hostel in their high-level location. “What image-conscious business is going to buy office space in the same skyscraper with a youth hostel?”

Empire Tower, the skyscraper where High Level hostel sits, is still largely empty two years after opening. In the foyer, an oval marble sculpture echoes the oval motif of the 60-story tower, designed for a more professional clientele.

Forty-three stories up, High Level Hostel opened in September with 24 beds, with prices starting at $25.50 in a six-person room, including a breakfast of toast, porridge or muesli. The hostel manager, Leonid L. Fedotov, 19, who goes by the nickname the Beard, recalled backpacking guests from Holland named Ron and Eve.

“It was really cool because Ron and I played guitar in the evening,” he said, as they gazed out at the twirling facade of Evolution Tower and the sea of lights of Moscow below.
